| dc.description | The menu elaborated, goes by the name "Mar de la mitad del mundo". This name was given due to the Ecuadorian territory in the Pacific Ocean and all the products that are taken from this zone. Having a wide variety of seafood of a very high quality, it appeals my interest to take all of these products to a gourmet level without vanishing the essence of where they originally come from. Fishing, and all its processes up until consumption, are very important while taking a good quality product to the table of comensals, not only local but from all around the world. Because bringing Ecuador and its goods to a gourmet level, taking into consideration seafood and its daily uses, is part of my personal goal.
